French Onion Soup
French Onion Soup can be one of those 'complete' meals soups that make up a lunch menu or even a main course. Once you add the crusty cheese topping (...my favorite has a pastry lid on top of all that!) you have what a friend of mine calls 'a savory liquid pie'.
We have two slightly different recipes for you including a video version, so try one of them and see how they taste but beware, they can be very filling.

Onions come in various shapes and sizes but here we are more concerned with the Globe or Spanish Onion, the one with the white flesh and brown papery skin. They are from the lily family and half a cup of Spanish onion will have a calorie value of about 35 calories.
Onions are a good source of Vitamin C, Potassium and Folic acid, as well as being high in antioxidants.
French Onion Soup
Your Ingredients:
1/2 cup of unsalted Butter. 2 tablespoons of Olive Oil. 4 cups of sliced Onions. 4 (10.5 ounce) cans of Beef Broth. 2 tablespoons of Dry Sherry. 1 teaspoon of Dried Thyme. Salt. Pepper. 4 slices of French Bread. 4 slices of Provolone Cheese. 2 slices of Swiss Cheese, diced. 1/4 cup of grated Parmesan Cheese.
Cooking Your Soup:
Melt Butter with Olive Oil in an 8 quart stock pot on medium heat. Add Onions and continually stir until tender and translucent. Do not brown the Onions. Add Beef Broth, Sherry and Thyme. Season with Salt and Pepper, and simmer for 30 minutes. Heat the oven broiler. Ladle soup into oven safe serving bowls. Place one slice of Bread on top of each. Bread may be broken into pieces if you prefer. Layer each slice of Bread with a slice of Provolone, 1/2 slice of diced Swiss and 1 tablespoon of Parmesan Cheese. Place bowls on cookie sheet and broil in the preheated oven until Cheese bubbles and browns slightly.
French Onion Soup requires to cooking processes, the making of the soup and the baking of the crust. The cheese you may use and the form the top 'crust' takes, varies with every recipe.
