The word SOUP probably derived from a combination of the Latin word “Suppa”, the French “Soupe” and the German “Sop”. Basically this was using bread as a bowl or to soak up the ‘soup’.

During the 16th century, soup was sold on the streets of France and was called “Restaurant” from which came the shop name of today, and soup recipes have been available in North America since at least 1742 when the fist “Colonial Cookbook” was available.

Commercial production came with the invention of canning in about 1897, when condensed soup was made, followed by ready to eat soups and dried soup mixes. We want to consider only homemade soups here. Soups that are made with fresh produce and meats, and soups that are made to your own specifications.

The humble soup, that is healthy, hardy and heart warming…and we have hundreds of free recipes for you to try.

Soups  are generally classified into two major groups: Thick Soups and Clear Soups. Thick soups are further classified by the name of the thickening agent and clear soups divided into bouillon and consomme.

Confused? No need to be, because all will be explained in simple, workable terms along with cooking tips and suggestions, hundreds of recipes with directions and even suggestions for serving: including what best to serve in!

And then there are Sauces, those semi-liquid (or sometimes mostly liquid) mixtures that are used in or on other foods. The French classify them into Major and Minor groups. The major or ‘mother’ group would include Bechemel, Espagnole, Veloute and Allemande to be joined later by Butter Sauces, Tomato, Emulsified etc. etc. etc.

Confused again? Okay, you have convinced me you need another soup joke…
